Take your camera's lanyard (get one if it doesn't have one) and attatch it to your waders. Use a carabiner, etc. Then tuck it inside your waders, not in a pocket - just loose. That way, you can use your free hand when you're fighting that brute of a trout to dig in your waders, turn your camera on and be ready to snap the trophy photograph. Plus, if it's attached to you - you can't lose it!
Another tip: before you hit the water for the day, set up your camera's settings according to the type of light you're going to be shooting in for the day. For instance; if it's cloudy, select the appropriate settings ahead of time in your camera so you won't be messing around with them when it's time to take the trophy shot.
